Left Bank restaurant, Perry St. West Village

With an extremely small number of restaurants opting to continue take-away operations during COVID, there are some exceptions. At Left Bank - an outstanding neighbourhood restaurant in the West Village - chef/owner Laurence Edelman (pictured) has brilliantly pivoted his operation towards take-away and delivery. Poulet sans Tête runs from late afternoon to early evening. After lockdown, the restaurant will initially be forced to operate at 25% capacity, shored up by the continued delivery/collection service. Survival of many businesses will depend on this level of innovation and versatility, as furlough payments and government assistance are not expected to last for long.
